Sour cream and chive on fetticine
Category: Main Dishes - Pasta

Suitable for a: vegetarian/vegan diet


Ingredients:

2 tbsp butter or margarine
2 tbsp flour
3/4 cup milk or soy milk
Salt to taste
Couple tablespoons full of sour cream or sour cream substitute
Some fresh chopped chives
1 clove minced garlic
Some cooked fettuccine


Instructions:

In a medium sized pot, melt the butter or margarine on low heat. While it melts, take the milk or soy milk and heat it up for a minute or so in the microwave, so the milk is warm. You can also use a separate pan to do this on the stove.

Saute the garlic in the margarine for a minute or so, then add the flour. Stir together and don't allow the flour to brown. After the mixture has bubbled a bit, add the warm milk. Warming the milk ensures that the sauce isn't lumpy.

Bring just to a boil, and then let it boil gently on medium low heat. Stir it often, and as it heats the sauce should begin to thicken. Add the sour cream, salt and chives. This dish will probably need a lot of salt added. Let it boil for longer if you want it thicker, or add water for a thinner sauce. Throw in some frozen veggies if you'd like. When you've got it at the desired thickness, spread it over some fettuccine and you've got a quick meal.

I started making this with vegan ingredients a few months ago and it tastes just as amazing as before, without the dairy!

This serves one, and it's nice on a cold night when there's no one else around. As are many fettuccine dishes :]

Yes, it's delicious with vegan ingredients too. :p Plain yogurt can be used in place of the sour cream as well.
