Vegan Carrot Bundt Cake With Chocolate Glaze

Suitable for a: vegan diet
Ingredients:

Cake:
1 big carrot, grated (about 5 oz.)
1/4 cup vegetable oil
3/4 cup water or fresh carrot juice
1 cup brown sugar
1 1/2 cups whole wheat flour
1 dessertspoon baking powder
1 pinch salt
Chocolate Glaze:
2 oz. semisweet chocolatede, chopped
1 dessertspoon molasses or maple syrup
1/2 cup rice milk, almond milk or soymilk
Instructions:

Cake:
Blend all the ingredients except for the flour and the baking powder until well mixed. Sift the flour, salt and baking powder into a bowl and make a well in the center. Pour the blended mixture slowly and mix with a whisk until smooth. Pour batter into a bundt pan, place in a 375 degree preheated oven and bake for about 40 minutes.
Chocolate Glaze:
Boil the milk in a small saucepan, add the chocolate and molasses or maple syrup. Cook in low heat stirring constantly until you can see the bottom of the pan. Pour the glaze over the cake while it's still warm from the oven. Cool the cake completely and serve.
