Absurdly Easy Lemon Cake
Category: Desserts - Cakes

Suitable for a: vegan diet


Ingredients:

3 cups flour
2 cups sugar (I use slightly less)
2 tsp baking soda
1 tsp salt
3/4 cup vegetable oil
2 tablespoon lemon juice
2 teaspoon vanilla
1 1/2 tsp lemon extract
2 cup cold water or soy/rice milk


Instructions:
------------------------------------------------------

Preheat oven to 350F. Grease pan(s) with margarine and coat lightly with flour.

Mix together dry ingredients. Whisk together wet ingredients in a separate bowl and add to dry ingredients. Stir until just combined. This recipe works best in two 9-inch cake pans (layer cake). Bake in oven at 350F for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Allow cake to completely cool before removing from pans. Enjoy!

I've used just plain vanilla, which was good. I'm sure lemon icing would be good too, if you're a lemon fanatic. :)

I love anything lemon! I always have a million in my refer, so I can't wait to try this one. It sounds great, and probally not too sweet. Thank you for the recipe.

I tired this one today, but something went wrong. =( The chocolate version has vinegar in it, was this one supposed to too?

What went wrong? Did the cake not rise? Not cook? Did you use a bundt pan or two separate smaller pans (layer cake)?

The vinegar is simply an acid that reacts with the baking soda - which the lemon juice does in this one. It worked fine for me. Let me know exactly what happened and maybe I can figure it out.

I don't think it would impart as much of a lemon flavor - the extract is pretty concentrated. I wouldn't want to add too much extra lemon juice because I'm not sure how it would affect the chemistry... but lemon zest might do the trick.

If you're adventurous, give it a try and let us know what happens!

I am going to make this (in cupcake form) this weekend for friends. I have complete trust in fyvel's taste, so I know everyone will love this!

I'll be making the absurd chocolate recipe in cupcake form as well. I'll let everyone know what kind of reviews I get.

I did 2 pans. It didn't cook in the middle and stuck itself in the pan, then crumbled out in pieces. I may of done something wrong, my cooking skills are still basic. :o

If it didn't cook in the middle, you need to leave it in the oven a bit longer. A toothpick stuck in the middle should come out clean - with no liquidy stuff stuck to it (crumbs are ok). This cake will actually brown up - so it will look like it should be done when it isn't.

As for it coming out in pieces: first you really have to let this cake completely cool before you try to take it out of the pans (same goes for the chocolate version). Second, make sure you grease & flour the pans before you put the batter in or it will stick and fall apart when you try to take it out. I find it also helps to loosen the cake around the edges with a butter knife before trying to take it out of the pans.

Hope you give it another try, its a really yummy cake :)

this is soo absurdly easy! i just made it for my sons 9th coming up. i plan to frost it with coconut lime frosting as he requested a lemon lime cake. i will freeze it just as i did last year and it turns out great! i have to freeze it as i have to make his twin sisters cake and freeze that as well--i dont want to have to make 2 cakes and 2 frosting recipes on their b-day!
