Spicy Apple Lentils and Rice

Suitable for a: vegan diet
Ingredients:

2/3 to 1 cup lentils, rinced and sorted
2-3 cloves of garlic, minced
1 onion, chopped
1 large celery stalk, chopped
1 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon ground corriander
Black pepper to taste
Juice from one large lemon
1 apple, chopped
Dash of cayenne pepper
1 cup brown rice
Water to cook lentils and brown rice
Salt, if desired
Instructions:

Start cooking the brown rice according to package directions.
Saute the onion and garlic in water (or olive oil if you want. I use water.). Once the onions are translucent, add enough water to cook the lentils and bring it to a boil. Add the lentils, ginger, cinnamon, corriander, celery, cayenne pepper, and black pepper. Lower the heat and simmer for 10 minutes. Add the the chopped apple and simmer for five more minutes. Pour in the lemon juice and simmer for an additional five minutes.
Serve over brown rice.

I really like this recipe. It's sweet and spicy, all at the same time!
Some people like to top this with raisins.
