Hawaiian Rice
Category: Main Dishes - Rice

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

1 cup uncooked jasmine rice, rinsed and drained

1/2 cup pineapple juice

1/2 cup crushed pineapple

1 chopped red bell pepper

1/4 cup currants

1/2 teaspoon cinnamon

1/8 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup chopped almonds.


Instructions:
------------------------------------------------------

In a medium saucepan with a tight-fitting lid, combine rice, pineapple juice, and 1-1/4 cup water. Bring to a boil. Add pineapple, red pepper, currants, cinnamon, nutmeg, and salt; stir, reduce heat, cover, and simmer for 20 minutes. Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork and stir in almonds. Enjoy!

I adapted this recipe from a recipe in a whole grains information pamphlet we got at work. It's easy and very tasty!
