I've seen Arrowhead Mills Wild Rice Pancake & Waffle Mix..... anyone tried it?

I'm seriously going to have to weed through my favorites and write out all the recipes I've been collecting from this board. :) Target's pancake mix is I believe. I dont have the complete mix. I've got the add eggs and milk box. BUT, I added soy milk and threw some baking powder in the mix and voila. Nice fluffy pancakes.

I LOVE LOVE LOVE the Southaven Farm baking mixes. A bunch of them make pancakes (ginger, multi-grain, whole wheat, oat bran, corn) and if you make them without dairy (you can use any type of non-dairy milk and yogurt), they are totally vegan. I always add nuts or berries or dried fruit and they are without a doubt, the best pancakes my family and I have ever had. They're really healthy too. We use them for bread and muffins too.

I think thats the recipe i used before that turned out good. I used self raising flour+no baking powder though (didnt have any plain flour!)
I was gonna try froggy's but didnt have applesauce either

No need to stress, just head for your local grocery store. Aunt Jemima Original Pancake and Waffle Mix ingredients: enriched bleached flour (bleached wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), sugar, leavening (sodium bicarbonate, sodium aluminum phosphate, monocalcium phosphate), salt, calcium carbonate.

In case that all sounds like a bunch of big scary chemicals:

Niacin - also known as vitamin B3, plays essential roles in energy metabolism in the living cell and DNA repair.
Reduced iron - Also called "elemental iron," a dietary supplement often added to foods such as breakfast cereals or enriched wheat flour
Thiamine mononitrate - Also known as vitamin B1, it is essential for normal growth and development and helps to maintain proper functioning of the heart and the nervous and digestive systems.
Riboflavin - Also known as vitamin B2, it plays a key role in energy metabolism, and is required for the metabolism of fats, carbohydrates, and proteins.
Folic acid - A form of the water-soluble Vitamin B9.
Sodium bicarbonate - Produced from minerals, it reacts with other ingredients to release carbon dioxide, which helps the dough rise.
Sodium aluminum phosphate - Made from a substance that occurs naturally in soil, it is used to help the dough rise.
Monocalcium phosphate - Made from phosphate rock, used to adjust the pH of the final product.
Calcium carbonate - The vast majority of calcium carbonate is extracted by mining or quarrying. It is a source of dietary calcium.

So basically we're talking flour, vitamins, minerals, and leavening agents. And it's yummy.

Aunt Jemima Original Pancake and Waffle Mix ingredients: enriched bleached flour (bleached wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), sugar, leavening (sodium bicarbonate, sodium aluminum phosphate, monocalcium phosphate), salt, calcium carbonate.

To simplify: White flour, sugar, baking soda, baking powder, salt, chalk. That’s about as simple as it gets. Here’s my recipe for waffle mix, which makes very rich, decadent waffles:

300 grams self-rising flour
75 grams glucose
2 teaspoons Bird’s custard powder
2 cups plain Silk creamer
4 ounces Earth Balance margarine, melted

You could probably make a very acceptable pancake mix out of just self-rising flour, soymilk, and sugar. Not sure what the quantities of each should be, though. It’s nice to know that the Aunt Jemima Original is vegan, though—I think I’ll grab a bag of it next time I’m at the store and keep it around for when I don’t feel like making my own. I looked all over for a vegan mix and couldn’t find one. They all had buttermilk solids in them, including most of the Arrowhead Mills products. The only one I was able to find is the Arrowhead Mills buckwheat mix.

The beauty of his recipe is that it doesn't 'need' applesauce necessarily. Use mashed banana or other soft fruit, a couple Tbsp. pureed tofu, something like that... it's all good.

I never understood why pancake mixes even existed, since a basic pancake recipe is so simple. I've been making them from scratch since I was a kid (although as a kid they had milk and egg in them and now they're vegan).
