I had such a craving for cheese that I decided to give in and had mac and cheese for dinner. I also has some buttered crackers for a snack. Well now I am paying the price. I have been so sick to my stomach and running to the bathroom so much that I am kicking myself in the head for giving in to my cravings. I am going to have to remind myself not to give in to my cravings anymore. What is it about cheese that is so hard to give up?

One of my online vegan friends told me this about cheese:
(some trivia for you!) [cheese] is actually mildly addictive as it contains casomorphines. All mammal's breast milk has this mildly addictive substance to keep the babies' going back for more- in the way cheese is produced, it makes the casomorphines more concentrated.

Hope that helped =]

Oh, yeah I know the cheese issue. I gave in to a pizza craving last week and my throat got so phlegmy I could barely talk. I'll probably do it again in a few months though, because I'm an idiot.

Don't worry about it. A lot of us "slip up" occasionally - don't knock yourself too much. :D
Think positive. Oh, and invest in some vegan cheese!

Vegan cheese? I've never heard of that before? What is it and where do I buy it?

All products containing milk make me sick and phlegmy. That's usually how I know a product contains it, if I eat one by accident.

I hear ya! Cheese is rough. No biggie, lesson learned is all. We all mess up now and then. Just watch out for increased cravings. I have had that happen to me before after eating something like that.

I slipped up accidentally when I was cooking and accidentally used the wrong spice that contained some cheese in it =o(

It's definitely rough sometimes. It's funny because I have very few craving for sugary foods anymore since I have increased my consumption of fruits but damn it the whole cheese thing still gets to me. I still get cravings for it and sometimes it is nearly impossible to fight them. I really wish there was a better alternative. I am reducing my consumption of nuts so I really do not want to to use nut cheese. I'm too afraid of using nutritional yeast because of the skin rashes I had in the past. If anyone knows of any other cheese alternatives please post them.

ive heard that "follow your heart" brand cheeses are good. though i havent tried them myself.

also, i have found that, even though im not vegan and i still eat cheese, that when im craving cheese, i might be craving salt, or the creaminess...like in a mac n cheese type deal. i usually make a nutritonal yeast sauce for this.

but, you can make a bechamel sauce for a "cheese sauce".
make a roux: heat 3-4TBS margerine/ other fat over heat (you can also add onion, shallot, or garlic and saute until soft).you just heat the marg to evaporate any water that is in it...it will bubble (about 2 mins, you might notice the separation along the side of saucepan)
then, take equal amt of flour (3-4TBS) and add to marg, stirring/whisking well. cook flour for about 2mins. it should be a sticky goo.
then add about 2c. soymilk and heat thru, stirring.
add flavorings (garlic powder, onion powder, herbs, salt, pepper, bit of nutmeg, mustard powder, tabasco) if desired.
sauce will quickly thicken. you can add your shredded cheese if you like as well.
this is good for pastas, lasagnas, veggies,(sauteed mushrooms are good to add to this sauce) etc.

hope it works for you.

Hello,

I recently bought some Tofutti dairy free cream cheese which is excellent. I got it from Hollond and Barrett.

Also, here is a link to a simple cheese sauce recipe:

I get the vegan mac n cheese at the health food store...dont even remember what it is called but it comes in a tan box with blue border

But generally I don't like vegan cheese....seems artificial to me, and it never seems to melt right.
