Sicilian Summer Squash Pasta Sauce
Category: Main Dishes - Pasta

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

2 handfulls of fresh basil leaves, roughly torn up or chopped

1 medium vidalia onion or about 1/2 large one, roughly chopped (l like kinda big pieces)

1 big elephant garlic clove sliced and roughly chopped or like 4 - 5 large regular garlic cloves

about 8 large fresh ripe plum tomatoes, skinned and seeded and roughly chopped or 1 28 oz. can of quality diced plum tomatoes

about 3 large yellow squash, unpeeled but washed well and sliced in about 1/4 inch thick circles, or you can also use zuccini

pinch of kosher salt to taste

dash of red pepper flakes to taste

about 4 tbsp. olive oil (you might need more depending on the pan you use)


Instructions:
------------------------------------------------------

put the oil in a large skillet or pan with high sides (you are gonna sauté this dish)

put the onion and garlic in the pan and sauté until the onion starts to look soft and starts looking transparent, don't brown.

add 1/2 of the basil and all of the squash and continue stirring and sautéing until the squash starts to look softer and starts looking clearer

add the tomatoes, the salt and the red pepper flakes and stir and simmer about 10 minutes.

add the rest of the basil and stir in and simmer about another minute.

Serve!


Additional comments:
------------------------------------------------------

You can serve this over your fav pasta (I like it over whole wheat penne) or you can just put it in a bowl and have it as a side dish with your meal. It is best if you use just-picked fresh and fragrant basil and you don't overcook it. If you use cheese in your diet, then grated reggiano parmesean cheese over the plate of pasta and sauce is yummy on it too. This is my friend's mom's recipe which is a variation of an apparently traditional Sicilian pasta sauce. I hope you enjoy it.

OK Savannah, I made your fantastico recipe...I did not have enough yellow squash so I added a small zuchinni...When it was finished I put over organic tri color pasta...It is delicious and the colors are great...Thank you so much..:chef:

based on experience i'd have to say the first half of the basil is going to be brutalized by the high heat so i went with dried off the shelf basil for that step. the later step i used 2oz. fresh basil and that was awesome. oh wait, also used san marzano style canned plum tomatos which have some basil in them too.
