Super-speedy Banana Flapjack Cake

Suitable for a: vegan diet
Ingredients:

4oz Wholemeal Self-Raising flour
4oz Porridge Oats
4oz Vegan Margarine
3oz Unrefined Sugar
2 ripe bananas
Instructions:

1) Melt the margarine in a saucepan over a medium heat. Turn heat off once melted.
2) Add the flour, oats and sugar. Mix in until there are no dry bits left.
3) Grease an 8 inch pie dish and put in half of the mixture. Pat down gently until level to form a base.
4) Slice two bananas onto the base (one layer deep....you may not need the full two bananas) and tip the rest of the mixture on the top. Press down again ensuring that you cover all the banana slices.
5) Bake in the oven for around 25 mins or until browned at gas mark 6.
6) Cut when cool.

This is just such a quick cake to make, with really basic ingredients which most of us have in our store cupboards. It's a fantastic snack to take out with you when walking, etc, as it has great slow-release energy from the oats and bananas. This is another of my favourite recipes which goes down really well with all my non-veggie friends!
