Vegan Chocolate Cake

Suitable for a: vegan diet
Ingredients:

3 Cups King Arthur [brand] All-Purpose Flour
2 Cups Sugar (We use turbinado or sucanat sugar - much better flavor)
2 tsp baking soda
1 tsp salt
1/3 Cup Cocoa
1 tsp Pure vanilla Extract (avoid imitation at all costs)
2 tsp distilled white vinegar
3/4 cup pure safflower (or canola) oil
2 cups cold water (MUST be cold)
Instructions:

Blend all dry ingredients. Then add to the mixture all the moist ingredients starting with the oil and water, first, then add vinegar and vanilla. Blend well with a FORK only. Do NOT beat. Bake in 350 degree oven in a 9x13 pan for 35-45 minutes. Or split up in to cupcakes (makes about 24) and reduce time in oven.
