Soy/Tofu Jerky

Suitable for a: vegetarian diet
Ingredients:

1 c Mesquite BBQ
1/4 cup Lime juice
2 tablespoons honey
1 tablespoon canola oil
1 package (15oz) extra firm Tofu
OR
1c Regular BBQ sauce
1/4c Soy sauce
2 tablespoons honey
1 package extra firm tofu
Instructions:

Open the tofu and place it between two flat object (cutting board and table, two big plates, etc.). Put something heavy on top of the object on top of the tofu. This is known as pressing the tofu. Tofu comes waterlogged so you want to remove the water so the tofu can readily accept flavors. If you do not press the tofu will not taste nearly as good. Anyway, let it sit like that for 20 minutes or so. If you're smart you'll put towels under the tofu to soak up the water. If you're like me you come back after twenty minutes and say oh no my floor is covered in water! After the Tofu has been pressed cut it into 1/4" wide pieces cutting the long way. I can usually get around twelve strips out of a block of tofu.
Prepare the marinade:
Mix all of the ingredients together really well. The honey and oil will sort of ball up sometimes so make sure you mix well enough that the mixture is of one consistency.
Dip each strip into the marinade and then place it in an airtight container overnight, or if you're lazy like me, for an hour or two. Some people cry sacrilage at a less than 200000000000 hour marinate but I've never had bad tasting jerky doing it this way. Regardless, once you've decided you've had enough marinating, dehydrate the strips.
To dehydrate you can either do it the fancy shmancy way with a food dehydrator, or the poor man's way which is to put it in the oven.
preheat the oven to 200 degrees. Put the jerky in and then go do something. You WILL have to turn it and some places I've read to do it every hour. I usually do it every 2-3 and once again, never had bad tasting jerky. You don't have to barricade yourself in your house and become a recluse because you HAVE TO FLIP YOUR JERKY. Just do make sure to turn it a couple times so that it comes out even. After about eight hours your jerky will be a nice dark brown all over. You can take it out and let it sit for a few minutes to cool down and then eat it all and marvel at how long it took to make vs. to eat. I prefer the mesquite lime version, but for people who are more into real jerky, the second version tastes more like real "jerky".

This stores well, although I would store in the fridge regardless of the fact that it's dehydrated. It is a bit chewier cold, I just find it more enjoyable. Eat it as an in between meals snack for a low fat, low cal, high protein treat. I can't believe I just wrote that last sentence.....oh well, ENJOY!
