My friend in Kentucky is having trouble getting vegetarian selections at her University cafeteria. Does anyone have advice on actions she could take to fix that?

Welcome! I'd suggest that your friend could check out www.peta2.com. They have lots of resources for high school and college students, including free information (http://www.peta2.com/COLLEGE/cyc-veganize.asp) to hand out to college cafeterias. PETA even works with some schools to help them find veg food in the area to serve. I hope that helps! :)
