Bean and Cheese Quesadillas

Suitable for a: vegetarian diet


Ingredients:

Here is a recipe for quesadillas made with cheese and beans. I've used black beans with jalapeno jack cheese as well as pinto beans with jala-jack cheese.

Ingredients:
8 tortillas
1 can beans rinsed and drained- type is your choice
1/2 chopped tomato
fresh chopped cilantro to taste (optional)
1/2 cup shredded cheese - type is your choice
about 4-6 tbsp chopped black olives
handful washed spinach leaves - chopped
salsa


Instructions:

Preheat oven to 350 degrees. Mash beans in a large bowl, mix in chopped tomato and cilantro. Place 4 tortillas on a baking sheet, spread bean mixture on them. Top with cheese, olives, spinach, and hot sauce. Place another tortilla on each one, and bake for about 10-15 minutes until heated through and cheese is melted.

I suppose a serving is 1 quesadilla per person, but I'm a woman and I could eat 2 for dinner. I typically eat one at lunch time, sometimes with some tortilla chips and salsa on the side. I think these would be yummy with some guacamole to dip them in. I can usually prepare these in about 20-25 minutes from start to finish including cooking time.
