Easy Vegan Paella

Suitable for a: vegan diet
Ingredients:

1 green bell pepper
1 red bell pepper
1 medium-sized red onion
0.50-0.75 lb. fresh green beans
1 12 oz. jar of quartered artichoke hearts
1 2.25 oz. can of sliced black olives (drained)
1 10 oz. package of saffron rice mix
Extra virgin olive oil
Instructions:

First, prepare the saffron rice according to the directions on the package. You can make your own if you want, but this is a "quick and easy" recipe so we're shooting for convenience.
While the rice is simmering, clean the bell peppers (remove seeds & veins) and chop them into 1/2" (or bite-size) pieces.
Chop the onion into 1/2" (bite-size) pieces.
Cut the ends off of the green beans, and cut them in half.
Cut up the artichoke hearts, into a size that is similar to the peppers and onion.
Next, line the bottom of a large skillet (or paella pan if you have one) with approximately 1/2" of the olive oil and heat to medium-high heat.
Add the bell peppers & onions, stir and cover.
Cook for 5-6 minutes, stirring occasionally.
As the peppers start to soften, add in the green beans, a little more olive oil and stir again. Replace the cover, cook for 3-4 minutes.
After green beans become about halfway cooked, add in the olives.
Stir, and replace cover. Continue cooking for another 3-4 minutes.
Next, add in the artichoke hearts. Stir. Add more olive oil if needed.
Cover and cook for another 3-4 minutes.
Once the peppers, onion and green beans are done, stir in the saffron rice and a bit more olive oil.
Reduce heat, and replace the cover for 1-2 minutes.
Once a uniform temperature is achieved, your paella is done!
Serve with a hot sauce of your choice (I prefer Sriracha).

Make sure that you get the peppers, onions & green beans tender. This is not a stirfry!!
Lots of olive oil is important. This recipe is supposed to be a bit on the oily side.
Traditional paella recipes call for either chorizo sausage or seafood to be added. If you like, add in some soyrizo "sausage". ( I don't personally think it needs anything else, but experiment to your tastes.)
This recipe makes a LOT of paella, probably enough to feed 3-4 normal adults, depending on their appetites.
The hot sauce is also optional and not integral to this dish.
