I'd like to try making the cookbook again. The theme is quick and easy meals. To meet that theme I have come up with requirements:

1. Prep/cooking time is less than 30 minutes (1 hour for baked dishes).
2. Limited number of ingredients (10 or less).
3. Ingredients can be found in most people's homes or easily found in grocery stores.
4. 3 or less pots/pans/appliances dirtied.
5. Must be easy enough for those with little or no cooking experience.

Recipes will fall into the following categories:

Snacks
Salads
Soups
Appetizers
Light Lunch
Dinner
Side Dishes
Desserts

The recipe must be your own or (the instructions) written in your own words. Recipes don't have to be vegan but it might be nice since it would appeal to more people. I would like to get 14 recipes for each category. That would be a different recipe every day for 2 weeks and almost 100 total.

If you're interested in submitting a recipe send me a PM with the recipe and which category it falls into. I will also be contacting some of you privately about submitting recipes. Remember, the name of the game is quick and easy.

You will receive credit in the cookbook and $1 from each cookbook sold will be donated to Farm Sanctuary. This is something I've wanted to do for a long time. We have so many people who need this, hopefully we can make it happen.

Thanks in advance for your participation.

Count me in. Quick and easy sums up most of my cooking. :)

How hard and fast are these rules? I have several recipes in mind that depend on baked brown rice (which I make ahead for the week) it takes over an hour to prepare but it's almost all inactive prep time.

I could probably fill a "make ahead" category by myself, I don't know if that is something you might be interested in.

Hmmm... Quick and easy huh? I think I can do that.

What about products like tofu, tempeh, SOME faux-meat products? I can find these in my local grocery store (Albertson's - just your basic grocery store, nothing fancy..) but I know many people can't. Eh, never mind, I'll stay with simple.

Also - some people consider Whole Foods or Wild Oats their "average" corner grocery store, but for most of us out here, those places are pretty much the same as a "Gourmet Market/Health Food Store" and definitely not some place we get to shop at often...

Could you tell us a bit more what you had in mind for "light lunch" and "dinner" as well?

(don't even get me started on the whole which meal is dinner/supper thing..lol)

Can it be a recipe I've already posted on VB?

I will definitely contribute to this. :) Is there a deadline?

Well, Michael... I submitted several recipes. Some are ones I posted here or on my blog - sorry for the lack of originality but those are pretty much all the recipes I have...

Then I went back and re-read the guidelines and realized some of them may not fit your criteria..

Sorry. Pick what you like or need and put them in whatever catagory (since I didn't remember that either).

okay. I'm not sure I can do 'original' recipes but I can definitely do slightly altered ones I use often written in my own words.

I'll submit a recipe in the morning. One I invented, too. Think I might have posted it here once too.

I would really to keep it to an hour or less. If it has a really short prep time and really short list of ingredients then it might be ok.

What about products like tofu, tempeh, SOME faux-meat products?

Tofu is fine. Faux-meat products like Boca, Gardenburger, Morningstar Farms are fine. Tempeh I'm not sure about.

lso - some people consider Whole Foods or Wild Oats their "average" corner grocery store

If I think it's a little too out there I'll ask people to come up with something else.

Could you tell us a bit more what you had in mind for "light lunch" and "dinner" as well?

Light lunch I see as sandwiches or things you can take in your lunch to work. Maybe something that's microwavable.

Can it be a recipe I've already posted on VB?

Yep.

Is there a deadline?

Not really. It'll probably take at least a month to put together so no hurry.

That'd be perfectly fine. :)

So, I am guessing the the food has to be something you can eat immediately after you make it?

I would like to submit some of my raw recipes to add some variety to the cookbook (or UNcookbook :) ) but several, even though, they can be made in less than half an hour, need to sit in the fridge or freezer or sit around and ferment to be ready to eat - so I guess those don't qualify. I'll have to search around for any super quickie ones I might have.

If we submit ones that are already on VB, can we just send you the link instead of re-typing?

Yep, link will be fine.

I finally submitted something :P

I suggest that once it's done you have a bunch of recipe testers to make sure things work the way they're supposed to. I find with my own recipes, I know when it's done, but don't necessarily have things timed out exactly, so I wrote down approximations, but it would be nice to have a few people run it through to make sure it turns out okay.

Not yet. I haven't forgotten about it though. I've been busy working on getting the blog going and a few other things.

I should have time to work on it some more this weekend.
