Stuffed Peppers
Category: Raw Foods

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

Red/Yellow bell peppers
Finely chopped cauliflower
Finely chopped broccoli
grated carrots
minced onion
1 mashed avocado
lemon juice
salt
walnuts pulsed until mealy
Cilantro

marinated mushrooms:
diced mushrooms
oil
lemon juice
shoyu
minced garlic


Instructions:
------------------------------------------------------

Combine all the ingredients except for the bell peppers
Stuff the mixture into the peppers and serve

This can be made many different ways by using various vegetables in the stuffing mixture. Use any veggies and spices to suit your taste.

I did the stuffed peppers part {didnt do the mushrooms} part tonight and it was awesome! I added some black pepper, cumin, and SPIKE all natural seasoning. I had it with raw baby carrots. Great!

Oh and also, I used a somewhat long thin red pepper and after stuffing it I sliced it into peices like a sushi roll and it was fun to eat that way. I think this would be really good with some type of raw sauce {maybe lemon based?} to dip the peices in. I need to go take a look at the raw salad dressing thread again.
