Raw Bacon

Suitable for a: vegan/raw diet
Ingredients:

1 large eggplant, thinly sliced lengthwise
3/4 c. oil
1 tsp. cayenne
2 Tbl. Raw Agave Nectar
4 Tbl. Ume Plum Vinegar
Instructions:
------------------------------------------------------
Marinate for 2 hours. Place on teflex sheets and dehydrate for 9 hours. Turn bacon over and dehydrate another 9 hours.

But I wanted to post it because I made it before for some raw foodists and everyone was crazy about it - they made some raw bacon cheeseburgers (except me that is - since the cayenne was a little too much for me!).
