Garlicky Broccoli with Pine Nuts

This is so easy and so delicious!

Chop up one head of broccoli. (Make sure to peel the stalks and slice thinly.)

Toss with:

1/2 cup olive oil
1 large clove garlic, minced
½ tsp. salt

Place the broccoli on a dinner plate. Sprinkle 1/3 cup ground pine nuts on top.

This is also delicious over zucchini noodles.

Wow. That sounds good - and very rich... wow, lots of olive oil and pine nuts. Yum.

Not to be a jerk about it, but isn't this basically just oily broccoli?

Months later I see this....

It is more like a marinated broccoli dish. Use a slotted spoon when serving the dish and it won't be as oily. It really is good! I like it in the summer when I need to fill up and want a cold salad dish.

To me, a good olive oil does not equate with oily. Depending on the origin of the olives, the flavor can vary quite a bit. Sounds like a good dish.

I'd like it with a little lemon juice squeezed on top.
