Chocolate Truffles

Suitable for a: vegan diet
Ingredients:

2 cups vegan chocolate chips
3 cups powdered sugar
8 oz Tofutti Better Than Cream Cheese
stuff to roll the truffles in - I used cocoa powder, crushed pecans, and shredded coconut
Instructions:

Melt the chocolate chips in a microwave (but be careful not to burn them).
While the chocolate is melting, mix the powdered sugar and the cream cheese in a food processor (I'm assuming a blender would work too). Add the melted chocolate and blend it in.
Let in set in the fridge for at least an hour. Then roll the chocolate mixture into little balls with your hands and roll them in coconut, cocoa, or whatever you'd like.
Makes about 20-25 truffles.

I got this recipe from vegweb.com but added an extra cup of powdered sugar. They were AMAZING, and super easy. I made them for a Christmas party and got about sixteen compliments. Pretty calorific, but hey, it's Christmas.
