Thanksgiving orange sweet potato cups with streusel topping

Suitable for a: vegan diet
Ingredients:
------------------------------------------------------
topping:
1.c flour
2/3 c.packed brown sugar
1/4 c chopped pecans
1/2 c coconut
1/4 c smart balance or margarine of choice
1 tsp cinnamon
cups:
4 large oranges
filling:
2 1/2 c mashed sweet potatoes (canned or fresh)
2 TB margarine
1 t cinnamon
1/2 t nutmeg
1/2 t vanilla
1/2 c brown sugar
Instructions:
------------------------------------------------------
topping;
combine all ingredients in a mixing bowl till well blended.
set aside
cups:
prepare cups by cutting oranges in halves,scoop out the
orange and pulp.make sure to leave a pretty thick shell.
reserve some of the juice.save orange "innards"for fruit
salad or whatever.
sweet taters:
drain and mash well,making sure to remove all lumps.
add remaining ingredients,moisten with reserved juice.
fill orange cups with sweet potato mixture and top with
streusel mix (I like to make mine nice and high).
bake in 350 degree oven till topping is bubbly.
allow to cool slightly before serving.

looks very pretty on the Thanksgiving table-
this recipe is very easy to adapt for larger groups if you like.
I have been known to eat these babies cold for breakfast!
