Peanut-Butter Pie

For a Vegan Diet


16 oz. soft tofu
1 cup creamy peanut butter
3/4 cup sugar
2 Tbsp. soy milk
2 tsp. vanilla extract
1/2 cup vegan chocolate chips
1 unbleached, 9-inch chocolate crust, chilled

• Combine all the filling ingredients in a food processor or blender and blend until smooth. Fold in the chocolate chips. Spoon into the pie shell.
• Refrigerate at least 2 hours and serve with vegan whipped cream and non-dairy ice cream.

Preparation time: 20 minutes Chilling time: 2 hours

I will try and make it but we dont get Chocolate pie shells in South Africa. Not that I know of anyhow.

Legg: You could try crushing up some Oreos (chocolate sandwich cookies) and mashing the mixture into the pie pan. I am not sure how well this would work, but it would come pretty close to what we consider a chocolate pie crust.

Thats a great idea! You can use graham pie crust too.. I normally add cocoa powder to the filling.

question: would using water instead of the soymilk work, do you think? I hardly ever use soymilk and I don't wanna buy a thing of it if i'm only using like 2tbsp of it

I am not an expert on cooking (hence the recipe :p ), but I don't think subbing 2tbsp of water with soymilk would make a difference. I would think the water would be fine considering the consistancy is about the same and it is only 2tbsp worth. Do you use almond milk or some other kind of milk or tofu? Maybe those could be used in place of the soymilk?

Let us know if you try it and if it works out for you!

I tried a recipe VERY similar to this and it came out VERY well!
two of my younger cousins (8 and 5 I think) both loved it and would not have believed me if I told them it had a tofu base. :sunny:

Actually you really dont need soymilk since you are adding tofu, its the same thing.. Just make sure you puree the fillings.

oh i must try this, i keep trying to prove to my family memebers (all five of my immediates are meat eaters. i'm the only vegan/veggie in the house) that I still DO eat "good food" too.
