Hippie Handbook Vegan Cake

Suitable for a: vegan diet


Ingredients:

2 cups brown sugar
1 3/4 cups whole wheat flour
3/4 cup un-sweatened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup soymilk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water


Instructions:
------------------------------------------------------

preheat oven to 350 degrees F

combine the brown sugar, flour, cocoa powder, baking soda, and salt in a bowl

add the soy milk, oil, and vanilla and beat for two minutes

stir in the boiling water

pour into an eight-inch square cake pan

bake thirty-five to forty minutes

allow cake to cool- the cake is done when a toothpick stuck into the center of the cake comes out free of crumbs

it is a good idea to let the cake cool for a few minutes before eating, but it can be eaten as soon as it is tolerable to be eaten ;)
