View Full Version : SUPER EASY Tomato Sauce

For this recipe, you can use canned tomatoes, but trust me, it's SO much better with fresh ones....


*******************

INGREDIENTS:

2 tbsp olive oil
2 cloves garlic
Salt & Pepper (to taste)
Approx 6 medium tomatoes, diced -OR- 1 large can of diced tomatoes
1/4 cup (packed) fresh basil, chopped fine
1 cup (packed) fresh baby spinach, chopped fine
1/4 cup vodka

Optional: Add cream or cottage cheese to sauce for protein and creamy richness.

Sautee garlic in olive oil (and salt & pepper, if desired) until tender.
***Be careful not to overcook, as garlic's flavor will be compromised by overcooking!***

Add basil, spinach, tomatoes and vodka and simmer uncovered for about 20 mins. If desired, add cream or cottage cheese at this time, heat through and remove from heat.

Once sauce is done, toss with penne pasta or top spaghetti-type noodles.

You should have put in a warning about pulling the pan off the heat before adding in the vodka b/c vodka is flammable.

Otherwise, great recipe. :up:

Can you use blended silken tofu instead of the cream/cottage cheese?

I figured this was common sense, but I forget that sometimes (not always) people don't think about stuff like this!

But 4evergrounded is right: TAKE THE POT OFF THE BURNER, folks! ;-)

BTW: 4ever, I haven't tried it with the tofu (I'm ovo-lacto who is a dairy-holic), but I assume it would be fine. Give 'er a try and let us know! Cheers! :beer: :bobo:

Yea i dont drink, so i was wondering can i leave the vodka out and would the sauce still be good.

I would imagine that you could just subsitute vegetable stock for the vodka.

I made this sans vodka and it was absolutely delicious! I kept "tasting" it so much that by the time the pasta was ready there was barely enough to cover it all! Excellent recipe that will be made again.
