For this recipe, you can use canned tomatoes, but trust me, it's SO much better with fresh ones....
*******************
INGREDIENTS:
2 tbsp olive oil
2 cloves garlic
Salt & Pepper (to taste)
Approx 6 medium tomatoes, diced -OR- 1 large can of diced tomatoes
1/4 cup (packed) fresh basil, chopped fine
1 cup (packed) fresh baby spinach, chopped fine
1/4 cup vodka
Optional: Add cream or cottage cheese to sauce for protein and creamy richness.

Sautee garlic in olive oil (and salt & pepper, if desired) until tender.
***Be careful not to overcook, as garlic's flavor will be compromised by overcooking!***
Add basil, spinach, tomatoes and vodka and simmer uncovered for about 20 mins. If desired, add cream or cottage cheese at this time, heat through and remove from heat.
Once sauce is done, toss with penne pasta or top spaghetti-type noodles.
