exactly how much should i be getting each day?

the multivitamins i take reads
"vitamin b12 (cyanocobalamin) 7mcg"

i take two per day so it ends up being 14mcg. i'm pretty worried about getting v-b12 deficiency. should i be taking a supplement a few times a week, on top of that?

(i also have about one glass of fortified soy milk per day)

If you've had a regular source of b12 then 14mcg/day should be fine, especially with the fortified foods added on.

I take 500 mcg/day sublingually, which is overkill but I feel better about it.

the soymilk i am drinking states B12 50% of USRDA per 8 oz glass, so i am drinking two 8 ozs glasses per day and supposedly i am getting 100% of the USRDA. I am new to this..so please someone tell me if i am REALLY getting enough B12. i really dont want to take vitamin supplements if i dont have to..i cant even afford them.

Yes, you're fine if you're getting 100% from fortified foods. If you were getting it from supplements you'd want a little more.

Actually a 3 month supply of b12 supplements are tons cheaper than drinking soymilk daily, but if you like soymilk then that's a great way to get b12, D, and calcium. I love Chocolate Silk but don't buy it that often because it's so expensive ($2.50/quart).
