Pea shoots and shredded Carrot salad

Suitable for a: vegan diet
Ingredients:

2-3 cups fresh pea shoots - the tiny tender leaves and stems just starting to grow...
1 cup grated and peeled carrots
Salad dressing:
½ cup seasoned rice vinegar
½ cup aji-mirin
1 tsp roasted sesame oil
1 tsp organic sugar
Instructions:
------------------------------------------------------
Mix pea sprouts, carrots, and ¼ cup salad dressing or more, just before serving. Save the rest of the salad dressing for next meals
