Carrot-Zucchini Snackin' Cake

Suitable for a: vegan diet
Ingredients:

2 c. shredded carrot
2 c. shredded zucchini
2 cups sugar/dry sweetener
2 eggs worth of egg replacer (I used 1 Tb, ground flax meal, 1 Tb. EnErGee Egg Replacer and 1/4 cup soymilk - blended well)
2/3 c. pecans or filberts, finely chopped
2 c. all purpose flour
1 1/2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp salt
2 tsp baking soda
1/2 c. vegetable oil

1. Start heating oven: (350 degrees) Grease and flour a 9x13 pan.
2. In a large bowl, cream together sugar and egg replacer. Add oil and mix well.
3. Mix in flour, spices, salt, and baking soda.
4. When well combined, add the carrots, zucchini and nuts.
5. Pour batter into pan.
6. Bake 50 min. (Check at 40 min).
