Easy Moroccan Style Couscous
Category: Side Dishes

Suitable for a: vegan diet


Ingredients:

1 Tbsp olive oil
1/2 tsp ground cinnamon
1/2 tsp ground cumin
1/2 tsp ground coriander
1/3 cup couscous
1/2 cup boiling water or broth
8-10 dried apricots, coarsely chopped OR 1 oz raisins
1/2 cup toasted pine nuts OR blanched slivered almonds
1 Tbsp chopped parsley (optional, I usually skip it)
Salt & pepper to taste


Instructions:
------------------------------------------------------

In a small saucepan, heat the olive oil over medium heat. Add the spices and cook for about 1 minute, or until fragrant and toasty.

Remove from heat, add couscous and boiling water/broth, and cover. Let stand 5 minutes. Stir in apricots/raisins and nuts.

Makes 2 servings.


Additional comments:

I love this couscous with grilled vegetables. If you find the flavor too sweet, reduce the cinnamon to 1/4 tsp.
