Strawberry Mango Tart
Category: Desserts - Pie

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

1/2 cup coconut oil
1/4 cup earth Balance
1/2 cup confectioners’ sugar
2 cups organic unbleached flour
1/4 tsp baking powder
1 (8 oz) package Tofutti 'cream cheese' softened
1/4 cup sugar
1/4 cup freshly squeezed orange juice
1 tsp orange zest
1/2 cup coconut milk (unsweetened, from a can)
2 cups strawberries, washed, sliced and hulled
2 mangoes, peeled and cubed
1/4 cup Apricot Fruit Spread (jam)
1 - 2 Tb. orange juice


Instructions:
------------------------------------------------------

For crust:
Preheat oven to 350 degrees F.

In a large bowl cream together the Earth Balance, coconut oil and sugar until light and fluffy.

Sift together flour and baking powder and stir into above mixture.

Pat into a 9 1/2 inch tart pan or a 9 inch pie pan.

Bake for 12 to 15 minutes. Remove from oven.

For filling:
In small bowl, beat Tofutti 'cream cheese', sugar and orange juice and zest until smooth.

Add coconut milk and beat until smooth.

Spread evenly in cooled crust. Arrange strawberries and mangoes carefully on tart.

Heat fruit spread in a saucepan over medium heat till it melts - you can add a bit if orang juice to thin if needed.

Simmer for 30 seconds. Brush over fruit.

Chill tart until ready to serve.
