Raw Cranberry Holiday Salad

Suitable for a: vegan diet
Ingredients:

Been making this for years - never realized it was "raw" until now.
It's PERFECT for holiday get-togethers... no one wrinkles their nose that it's "raw" or "vegan" or anything...
1 bag of fresh cranberries
4 tangerines or seedless satsuma oranges (Peeled)
1-2 apples
1 inch piece of fresh ginger (or more - I use LOTS more)
1/4 c. sweetner to taste (I use honey *gasp* but whatever sweetner works for you)
Instructions:

Chop cranberries & orange in food processor. Use as much orange as needed to keep cranberries moving so that they are finely chopped. Place in a bowl. Then chop apples and ginger in food processor. Add to cranberries.
Mix well and sweeten to taste.
Best if left in fridge over night to blend flavors.

Serve as a side dish or a "relish' or chutney sort of thing at any holiday dinner.
