Peanut Butter Cup Cheese Cake
Category: Desserts - Pie

Suitable for a: vegan diet


Ingredients:

1 package (12 oz) Mori Nu (or other brand) Silken Tofu
2/3 cup natural peanut butter
4 squares unsweetened baker's chocolate, melted (2-3 minutes in the microwave)
1/2 cup sugar (use less if using 'regular' peanut butter or sweetened chocolate, and adjust to taste)
1/4 tsp vanilla (optional)
Soy milk, as needed

1 prebaked chocolate pie crust


Instructions:

Combine all ingredients (except pie crust!) together in blender or food processor, blend until smooth. Add soy milk as needed, until it is at a desired consistency (pudding-like). Pour into pie crust, chill, and serve.

By looking at the ingredients, I am going to guess that it will be pudding like. However, if you add some agar to it, you'd probably end up with a nice firm cheesecake like texture.

I can't find agar anywhere around here. It makes me so sad. :(
