Caesar Salad

Suitable for a: vegan diet
Ingredients:

1 large head romaine lettuce, chopped
2 large cloves garlic, minced
Juice of 1 large lemon
4 Tbsp extra-virgin olive oil
1 Tbsp apple cider vinegar
1 Tbsp Dijon mustard
freshly-ground pepper
1/4 cup freshly grated Parmesan **OR** 2 Tbsp vegan soymesan
Croutons (optional)
Instructions:
------------------------------------------------------
Rinse lettuce & dry with a towel or salad spinner. Set aside.
In a large bowl, mix garlic, lemon, olive oil, vinegar, mustard, black pepper. Whisk. Add the lettuce, toss to coat well. Add the par/soymesan and toss again. Top with (optional) croutons.
