View Full Version : Vegan No Bakes

*1/2 c. Smart Balance Light (or margarine of your choice)
* 2 c. unrefined sugar
*1/2 soymilk
*3 Tbsp cocoa
*1 Tbs vanilla
*1/2 c peanut butter
*3 c. quick cooking oats
*pinch of salt

Melt margarine in a large, heavy saucepan. Stir in sugar,
soymilk, and cocoa.Let sit on medium heat, all the while
combining the peanut butter, oats and vanilla in a large
bowl. When the melted mixture comes to a good rolling boil,
(you'll know it when you see it)remove from heat. Stir in
the oatmeal/peanut butter mixture and pinch of salt.
Mix well and drop by tablespoonfuls onto foil or waxed paper.
Store in fridge till set, then devour with a big ol' glass of ice
cold soymilk! Sweet and very filling.:D

I have the "regular" recipe for these & am sooo excited to see a vegan version!

These are the cookies that they used to serve in elementary school like 20+ years ago, they are delish!!

I think they should come with a warning label:"Can be addictive".

I think I want to try them with half brown sugar, half white. Perfect for when you want to bake but don't want to turn the oven on in the heat!

Just made them with cinnamon pb, vanilla soy milk and 3\4 c. white sugar, 3\4 cup brown. They're yummy (the cinnamon makes them almost like mole cookies) but almost too sweet. Next time I might cut the sugar down to maybe 1 1\4 cup total or use plain soymilk. Thanks for the recipe!

Oh My goodness. I am so stoked to see this recipe! I had one version of it then lost it. As soon as I get home I'm making these. Must have the coconut IMHO. It makes the cookie. :)

These are incredible! I tried them with some coconut and they were great. I did not even have to refridgerate in order for them to harden. I just put them on wax paper on the counter.

I did make sure to do a rolling boil for one minute. I think that may help with making them firm. Anyway, great recipe!

Yeah, that's the secret. I have in the past had a big mush from not taking
the time to make sure to get the rolling boil thing right.
So glad you all enjoyed this recipe.
I must try the coconut version!

do you do the coconut instead of or along with the oats? i usually make them with just oats, i find they have the texture of macaroons but not everyone likes coconut so it's a good substitute.

i however, do like coconut :lick:

Does is matter if I don't add the cocoa?? Or will the recipe fall down?
They sound delicious and I want to try them badly

I 'm thinking it wouldn't make a difference, but I'm not positive on that one. I'm fairly certain the cocoa is just for flavoring. Only one way to find out, I guess. Let me know how it turns out.

You did mean Earth Balance, right? Smart Balance is not vegan, it contains whey

Smart Balance LIGHT is vegan.

There is one smart balance type that is vegan. It's the one with "omega" written on the packaging. It's not as good as Earth Balance, though.

The Smart Balance Light and the Smart Balance Organic are both vegan. I think that the light tastes like plastic, but the organic is YUM! The Smart Balance versions that have Omega (there are several different ones with Omega on them) all have whey and/or whey, I think.

okay so i followed the recipe to the T and it is 2 hours later and they are not firm like a cookie....i bought enough stuff to make 8 dozen for a thing at work....this sucks, if they don't firm up i'm going to have to go buy more stuff to make a different kind of cookie
