Grilled tomato and 'cheese' sandwich
Category: Sandiwches/Burgers

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

half a roma tomato (or tomato of your choice)
slices of any vegan/veggie 'cheese' you like
2 slices whole wheat bread
few sloshes of olive oil into a pan

mustard and vegan mayo are optional


Instructions:
------------------------------------------------------

start by putting a pan over the stove, with a few sloshes of olive oil on low heat

take the 2 slices of bread and start by spreading mustard and vegan mayo (optional) on each piece of bread

cut as many slices of 'cheese' as you would like

cut the tomato into small pieces (makes for less sloppy when eating)

layer the 'cheese' and tomato on the bread and make a sandwich

grill in the pan, like you would a grilled 'cheese', it will go pretty quick

simple, tasty sandwich is quick

you can experiment by adding in whatever you think would be good

I did not like this. I didn't like the veggie slices I bought , I swear I nearly threw up..:down:

You could try slathering each slice of bread with Earth Balance. That's usually pretty good.

And perhaps instead of vegan cheese, try avocado or hummus or a generous helping of Vegenaise. It's not the same, but it's still pretty good.
