Coconut Limeade

Suitable for a: vegan diet


Ingredients:

-10 large or 15 small limes (don't bother with key limes, it's not worth juicing the darn things)
-1 can of coconut milk
-1/2 cup of sugar or more to taste. Turbinado or other sweetener to taste also works.
-35 ounces of water
-a 50 ounce bottle with lid (from juice or water works best...I like to get a 50 ounce bottle of water and drink enough out of it to fit the lime juice and coconut milk in)
-a juicer


Instructions:

Slice all the limes in half and dip the end of the knife into each segment once or twice. This helps loosen the pulp and get more juice out. Then juice each one and collect all the juice in a cup that's easy to pour out of.

Pour the lime juice, coconut milk and sugar into the water in the bottle. For the sugar you can use a funnel made out of paper rolled into a cone to make it easier. Put the cap on and shake shake shake. You might want to start out adding smaller amounts of the ingredients and taste, as some people like theirs weaker and some stronger.

It is imperative to store this in a bottle with a cap, as it has to be shaken up each time you drink it.

The creaminess of coconut milk takes the edge off the lime juice, and the whole experience is a tropical twist on a refreshing summer favorite. :) Coconut extract or flavoring can be added if a stronger coconut flavor is desired, or for an adult version, add Malibu or Parrot Bay. Yum!
