Hummus Pizza with caramalized onions and roasted red peppers
Category: Main Dishes - Other
Suitable for a: vegan diet
Ingredients:
------------------------------------------------------
1 pizza crust (either home-made or store bought)
1 cup hummus
3 red onions sliced thinly
2 TB balsamic vinegar
pinch raw sugar (optional)
1 jar roasted red peppers, drained and cut into strips (you can you roast your own but I did it the lazy way and used ones that came in a jar)
2 teaspoons dried rosemary, crushed to release flavour
Instructions:
------------------------------------------------------
Preheat the oven to 220 degrees C.
Cook the onions in the balsamic vinegar on med heat until they are sticky and caramalized (about 15 minutes)
Spread the hummus on the pizza crust.
Top with caramalized onions.
Then lay the red peppers on top in rows to form a pattern.
Sprinkle the rosemary on top and bake for 10-12 minutes until crust browns. *If you made your own crust you will need to bake the crust for 10 minutes, take it out and add the toppings, then bake for 10-12 more minutes.*

We had this last night for supper and it was so good I dreamed about eating it all night long. It was so rich tasting but incredibly easy to prepare.

I made this and it is sooooo good! I added mushrooms to the onions and instead of one big pizza, I used flat bread circles. And I roasted my own peppers b/c I dont' like the ones from the jar.
My (omni) b/f loved it too.

It is bloody hot here I did it the cheat way using crumpets (english muffins) and the hummus, onions, peppers and added a little smoked tofu and just used the broiler to "cook" so i wouldn't heat up the house and it was lovely.

Oh that sounds so good right now. You're making me hungry! I wish I could buy something like this in the frozen section of my supermarket. It's hot here too. It's after 11 pm and it still feels like it's 85 degrees inside with all the windows open and the fans on.

Apologies that this is not a vegan question. For those of you who have tried this fabulous sounding pizza but also eat cheese, what cheese would you recommend to add? Sounds like feta would be too strong a flavour, but mozza too bland. Suggestions?

I made this last night. It was really good, although I couldn't use all the onions the recipie called for. Maybe my three red onions were much bigger than yours.
My friend really liked it too!
I would like to try this with artichokes and maybe even sundried tomatoes,

I made this tonight and it was bloody gorgeous.
I had a similar onion problem, although after my second onion I stopped chopping as it seemed like a lot.
I think adding anything else would ruin the flavor combination and confuse the pallet.

Can I just say, YUMMMMMMY this was awesome!! I made it Friday night and I am STILL thinking about it!!
I made a few modifications but the essence of the recipe was the same I think.
I used:
homemade yeast-free whole wheat crust
2 small white onions (didn't have red onion) - cooked in a little bit of olive oil, not balsamic vinegar (not GERD-friendly :(
no sugar
Cooked at 425 degrees for about 20 minutes I think??? OMG it was fabulous! I am making it again this Friday night!!:hungry:

I'm a sucker for feta, so I would just use that. :D
I'm going to try making this on flatbread so I don't end up overeating. I feel that overeating is highly possible with this recipe :) *mmmmmm hummus*

Holy crap, I think you should just title this thread "Orgasm," 'cause I'm pretty sure that's what you're describing. I HAVE to make this.
Did you use store bought hummus (and if so, what kind?) or home made (and if so, what recipe?)?

Okay, so, I made this for my lunch, as I previously posted. Except I used 2 pitas, halved; about and 1/8 of a large red onion, 1/2 cup of mushrooms, 1/2 cup hummus, and one roasted bell pepper. I just crushed enough rosemary on top to cover all four pita halves, and made sure not to let the mushrooms get too small. I stuck it in my oven for 10 minutes at 430F, which is 220C for those of you who need the conversion.
It was the best thing I have ever made, in short. I will make it again and again and again and again. So delicious.

I made this as an appetizer for some omni friends. They all raved about it. It was so good! I highly recommend it!!!!
