Stuffed Artichokes for those who need a little more healthy fat in their diet

Category: Main Dishes - Other

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------
1 whole artichoke ( cut and cleaned, I will include how to do this after the recipe )
1/2 to 3/4 cup breadcrumbs depending on the size of he artichoke
3 - 4 tbsp olive oil depending on the breadcrumbs
If you are a vegetarian that eats cheese you can add some parmesean cheese as well.


Instructions:
------------------------------------------------------

1. Mix breadcrumbs and olive oil in a bowl ( cheese too if you wish ). Do
this until the mix becomes more sticky than dry. This takes practice.
Add more olive oil if needed.
2. Pull apart leaves and stuff the bread mixture into the leaves. it may
look like you are not getting much in there but trust me, there is tons
so be light on the stuffing.
3. Stuff the center with leftover breadcrumbs if you wish.
4. Place in a steamer for 25 - 30 min depending on the instructions.
5. When finished, take out artichoke ( it can be really hot so be careful )
and place in a bowl or dish. Make sure you have somewhere to put
the leaves, and eat. You eat the breadcrumbs and pull off the meaty
end of the leaf as you go. This takes practice too. When you get to
the center make sure all the fuzzies are off the heart of it, and eat
the whole heart. Thats the best part. ENJOY.

This is a really filling dish depending on how you cook it. Good healthy fats but dont add too much.

To clean the artichoke. Get out a spoon and pair of cooking scissors. Go leaf by leaf and cut across the top of the leaf to get rid of the spike or sharp edge. Do this for all of the leaves from the bottom to the top. When you get to the top, open up the artichoke as much as you can ( this can be hard ). Then pull out all the small yellow and purple leaves until you can see the heart in the center of the artichoke. When you can see the heart, you will see hairlike fuzzies. Scrape them all out with a spoon. They can be really easy to choke on so make sure you get as much out as you can. Then wash the artichoke to get all those hairs out and dirt and such. you are ready to go.

this sounds like my great aunt's recipe...too bad for me all the breadcrumbs I've seen aren't vegan...I'd have to make them homemade :-p
