Vegan restaurant style portabello mushrooms

Suitable for a: vegan diet
Ingredients:

1 portabella mushroom ( you can either slice it or just use the cap, you can also buy them presliced )
2 slices vegan moz cheese ( I use 2 you can use one or more )
1 tbsp chopped garlic ( i love garlic so if you dont take it down a notch and just use 1 teaspoon )
handful spinach leaves ( chopped and cleaned since they can be dirty )
2 dashed minced onions ( you can use a handful of the real thing too, but it can take away from the taste of the mushrooms )
3 tbsp marsala cooking wine
3 tbsp low sodium soy sauce ( I use this instead of salt )
Instructions:

1. Clean your mushroom(s) and break off the stem.
2. Put about 2 tablespoons of olive oil in a flat pan on med heat.
3. Make sure the oil is hot, and lay the mushroom cap (gills down, or
so I call it ) in the pan.
4. If you have room or you used the slices, lay the spinach, garlic,
marsala wine, soy sauce, and minced onions in the pan.
5. Cook the spinach, garlic, and minced onion until the spinach gets
very dark and stringy and you can smell the garlic.
6. Cook the mushroom until it turns dark brown and is very flexible,
almost falls apart.
7. When they are both cooked, lay the hot spinach, garlic, and onion
mix on a plat in a mound, put the slices of cheese on top or mix in
the feta. Then lay the mushroom cap on top of the heap and let it
sit for a little until the cheese melts.
8. ENJOY....

I know that this is a very popular recipe in restaurants, but I figured I would put it on here for anyone who has little experience with cooking. This is a great recipe for a side dish, although I tend to make a lot and eat it as a meal. So here ya go...
First off, let me say that if you are vegetarian, a good variation would be to use feta cheese instead of vegan moz...it tends to taste better depending on the type of vegan cheese you use.
There are many variations to this recipe so experiment until you get the taste you want. Let me know what you think if you try it
