Sweet potato, spinach, and water chestnut stir-fry

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

500g sweet potato, orange is best
1 tbs oil
2 cloves crushed garlic
1 fresh red chilli
1/2 tsp salt
1 tbs rice wine winegar
small can (250ish grams), sliced
2 tsp dark brown sugar
400g baby spinach leaves
2 tbs soy sauce


Instructions:
------------------------------------------------------

Cut the sweet potato into cubes of roughly more than half an inch. Cook in a large saucepan of boiling water until tender, about 10-15 minutes. Drain well.
Chop up the chilli (with or without seeds) and mix with the vinegar and salt. This is called sambal oelek.
Heat a wok till very hot, then swirl in the oil to coat. Stir-fry the garlic and sambal oelek for 1 minute, untill it smell good, then add the sweet potato and water chesnuts and stir fry over a medium heat for 2-3 minutes. Add the sugar and cook for a further 2 minutes, or untill the sugar has melted.
Mix in the spinach and soy sauce and wait until it has just wilted. Serve.

This serves four people, with accompaniments of rice or crusty bread rolls. Enjoy!

Sounds wonderful Mish,
I just made a stirfry with green beans, minced garlic, yellow squash, zucchini, onion, fresh basil and rosemary...I cook it in toasted seame oil..Serve over brown rice..
Sorry I do not measure, but I put the green beans in a few minutes ahead of the other veggies and the herbs at the end..
