sweet and sour pepper buckwheat noodles
Category: Main Dishes - Pasta

Suitable for a: vegetarian diet


Ingredients:

3 Bell peppers (prefreably one of each colour)
2 tbs vegetable oil
5 tsp sesame oil
2 star anise
60ml (1/4 cup) red wine vinegar
1 tbs dark soy sauce
100g (less than 1/2 cup) sugar - brown
300g buckwheat noodles
1 tbs balsamic vinegar
1/2 tsp extra sugar
2 spring onions, finely chopped
2-3 tbs lightly toated sesame seeds


Instructions:

Thinly slice the peppers. Heat up the vegetable oil and 1 tsp of the seame oil in a saucepan on a medium heat. Cook the star anise for 1 minute, or untill the oil starts to smoke. Add the pepper and stir for two minutes, then reduce the heat to low and cover. Cook for 5 minutes, stirring occasionally.
Increase geat to medium again, and add the red wine vinegar, soy sauce and sugar, stirring untill dissolved. Boil for two minutes, then remove form the heat and cool. Remove the star anise, then remove the pepper and drain and place in a bowl.
Cook the noodles untill aldente ish (about 5 minutes should do) Drain and rinse in cold water quickly. Combine the balsamic vinegar, what's lef of the sesame oil, extra sugar, and 1/2 a tsp of salt. Stir it untill the sugar and salt dissolves. Toss in the noodles to coat them, then mix in he pepper and spring onions. Sprinkle with sesame seeds and enjoy!

This should be enough for four people. I really enjoy this recipe and make it quite often hehe ;-)
