Easy Fajitas
Category: Main Dishes - Other

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

1 red bell pepper
1 green bell pepper
1 onion
1 yellow squash
1 zucchini
1 bag of whole wheat tortillas
soy sauce
olive or vegetable oil

Add additional veggies if you would like

*Makes servings for 2/3 people*


Instructions:
------------------------------------------------------

Cut the peppers into thin strips
Cut the onion, zucchini and squash

Combine veggies in a large pan, over the stove oh high temp.

Add as much soy sauce and olive oil as you would like.

Keep veggies over heat until they start to absorb soy sauce and oil, and become softer in texture and darker in color. Stir frequently.

Remove veggies from heat.

Place tortillas on large plate in the microwave and heat for about 30 seconds.

Place veggies in the center of the tortilla and rap them up.


Additional comments:
------------------------------------------------------

Add tofutti better than cream cheese and salsa to the tortilla, before topping with veggies.

Sprinkle vegan cheese over the top.
