Chocolate Mocha Cookies

Suitable for a: vegan diet
Ingredients:

1 1/2 cup flour
1 stick vegan margarine
1/3 cup maple syrup
1/4 cup sugar
4 Tbsp cocoa powder
2-3 Tbsp instant coffee powder
1 tsp. vanilla
few pinches of salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. apple cider vinegar
1/4 cup oil
Instructions:
------------------------------------------------------
Preheat oven to 355 degrees F
Mix margarine, sugar, maple syrup, and vanilla together in a mixing bowl.
Mix the remaining dry ingredients seperately.
Add the dry mixture and the oil to the wet.
Use additional oil to grease the baking sheet.
Spoon dough out onto the baking sheet, about 2 inches apart, making them as big as you like.
Bake for about 12-15 minutes.

Ok, I thought up of this recipe so I could bring something to my chemistry class for this party thing. Well, I hardly measured anything, just threw a bunch of ingredients together into a bowl, and hoped that it would taste good. And it turned out great! Anyways, since I didn't measure, the amount of ingredients here is my best guess of how much I used, but I'm not sure if it's totally accurate. I plan to make these again very soon, and I'll use the same recipe here, to test it out. I know my first batch turned out great. So, if something seems a little off, most likely the amount of margarine (I just scooped out however much I needed, didn't measure), well, feel free to tweak it around to get the best results. Well, enjoy my recipe! If these turned out the way my first batch did, I know you'll love em!
