Olivia's Easy Vegan Peanutbutter Fudge
Category: Desserts - Other

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

**Warning, "Health Food" this is NOT!!

3/4 cup vegan margarine
--(We use Willow Run for this, definitely works the best)
1 cup peanut butter
--(If you're using "natural" peanutbutter, this works best with as little oil as possible stirred into it. This is a great recipe for that dry crumbly stuff in the bottom of the jar)
2 2/3 cups confectioners' sugar
--(Yes, it's possible to find non-bone-char -vegan- confectioners sugar)
1 cup chocolate chips (vegan if you prefer)
1/2 cup chopped peanuts (optional)


Instructions:
------------------------------------------------------

Lightly grease a 9x9 inch baking dish.
In a saucepan over low heat, melt margarine. Remove from heat and stir in peanut butter until smooth.
Stir in confectioners' sugar, a little at a time, until well blended.
Stir in chocolate chips and nuts if you want.
Pat into prepared pan.
Chill until firm.
Cut into squares.

This is another of my daughter's vegan experiments that turned out so SOOO good.
Definitely not health food, but makes EXCELLENT bake-sale donations or party treats...

OMG if I weren't trying to lose seven pounds for my daughter's wedding, I would make this right now! So I'll just have to wait for June 18th!

This should be a mandatory daily menu item at any recovering anorexic's table!!! :) 3 full servings a day, say I! :D

This stuff sells out in minutes at the Jr. High bake sales. Thats usually the only thing my daughter makes it for... I just can't imagine having a whole pan of the stuff at our house... my kids would finish it in minutes...

I think i'm going to have to make this tonight! It just so happens that I have all of the ingredients already at home....

The world would be a much sadder place without peanut butter....

It was mentioned in another thread (http://www.veggieboards.com/boards/showthread.php?t=59027&page=3) that this is a good way to use up that hard unspreadable peanut butter at the bottom of the jar. I had some, but not a whole cup of it. I ended up making about 2 pieces of fudge instead. Better for the wasteline too, eh?

I had four spoons full of peanut butter. Just plain old eating type of spoons, no technical measurements. So I scaled down the recipe based on that. I melted the margarine and chocolate chips in the microwave in a glass measuring cup then mixed in peanut butter. Once it was all smooth I started adding the confectioners sugar until I liked the consistency. I pressed a couple of balls flat onto waxed paper using a fork and tossed in the fridge for 5 or 10 minutes. (I just couldn't wait any longer!)

4 spoons peanut butter
3 spoons vegan margarine
4-5 spoons chocolate chips
10-11 spoons confectioners' sugar

I have to tell you, this fudge was so good (full size recipe) I went back to make this small version...WELL...I really messed up, I accidentally put a spoon of coffeebeans in...Ya know what...It was GOOD..Leave it to me to be in a hurry and not pay attention till its too late..

I almost posted this again. I'd forgotten it was here. My gosh this is good, but so rich and sweet it makes my teeth hurt if I eat too much. (My kids don't seem to have this problem - ha!).

That probably means I shouldn't eat it, as my teeth are extremely sensitive to large amounts of sugar.
