Avocado and pinneaple shake

Suitable for a: vegetarian diet
Ingredients:

1 very ripe avocado
1 small tin of pineapple chunks in syrup (or juice, not as fun)
5 oz (150g) yogurt
300 ml (generous cup) ice cold milk
mint sprigs
teeny pinch of salt (trust me)
Instructions:

Cut the avocado in half, remove stone, and scoop out the flesh in to the blender. Add the salt and the pineapple with the liquid. Process for 15 seconds then scrape escaped bits from the side and process untill smooth. Add the milk and process again untill frothy and pale. You can either blend in the mint now, or leave it as a garnish.

Serves four as a small serving as it's quite rich. (200mls each)
Great as a first course at a dinner party.
It would be great frozen as ice lollies (popsicles) and very refreshing on a summer's day!
