View Full Version : tofu [how long until it spoils?]

Can anyone tell me how long tofu will last afther its been open. Reading all you all message so make this sound easly. What is a good breakfast recipe that will stay with you. I eat a lot of oatmeal and grains. Would like to try some ealse. Thanks

Scrambled tofu is a great breakfast option... I could write out a long detailed recipe here, but if you did a search of these boards (see that search feature on the top tool bar>) you could find a TON of great "Tofu Scramble" type recipes...

Other breakfast items that stick with you (or they do me) are breakfast burritos, tofu 'crepes' (recipe in the recipe section I believe), vegan cashew french toast with fruit sauce and "sausage" gravy and biscuits...

Tofu lasts about a week in the fridge after opening. Make sure it stays covered in water and (I think) you need to change the water daily.
Another great tofu breakfast is tofu french toast. My kids love it and it's super easy. You just puree up soft tofu, a little maple syrup, a little cinnamon, vanilla, a pinch of salt, and some water (about 1/4 cup and 3 tbsp-I like the batter a bit runny, you can adjust the water) and veggie oil to make the batter. Dip bread in the batter on both sides and fry like regular french toast. The batter will keep a few days in the fridge too. I don't know how long exactly, it never stays long around here. :)

Lately I have been eating homemade energy bars for breakfast (truth be told it is more like 2 bars for breakfast because I cut them kind of big).

You can find the recipe on foodnetwork.com. Look for the show Healthy Eating with Ellie Krieger and the recipe is under the show titled "The Big Freeze" They are simple to make and really filling with a cup of coffee (or tea). I wrap them individually and store in the freezer.

I've had tofu last a couple of weeks. Just be sure to change the soaking water daily.

After opening a package containing a 16-oz. tofu 'brick', I try to use it up within 4 or 5 days (using 1/3 of the 'brick' each use). I've never had a problem with the tofu going bad. I let it sit in the water it was packaged with, and don't change the water. I do wrap the whole package in plastic and seal it. Changing the water may increase longevity, but this isn't an issue for me. :bow:

If you don't think you are going to use the tofu before it goes bad, just cut into serving sizes and toss it in the freezer. It changes the texture a little (I think the texture actually gets better) and it just needs to be defrosted before you use it.

When in doubt, FREEZE it! I LOVE frozen/defrosted/well drained tofu the best!!!

Fresh Tofu can be kept in the fridge about one week-- change the water every day is right.

I never use whole block of fresh tofu, so I usually freeze it first thing. I cube it up, then lay it flat in the freezer in a big baggie (or several baggies on top of each other) like a gallon size with space around each cube. When they are frozen in a few hours shake the bags and you will have separated frozen cubes which you can just reach in and grab a handful and throw it in whatever you are making. You can re-use the bags over and over for the same use. This is great if you are single.

Breakfast? Dont laugh but I eat hot lentil or pea soup or sometimes a rice pilaf for breakfast. I get up pretty late because I work nights so it serves as brunch, but I don't see why someone couldn't eat it in the early morning. I usually make a pot one day a week, or make some and freeze it, keep it in the fridge and dip out a cup (a serving would be about a cup) and boil it or microwave it. It is cheap, good, hearty, fast, and has protein and not a lot of sugar. Sometimes I'll have some toast with it too. Ive been doing this for awhile, and haven't suffered any ill effects--
