I made this today and it is soooo good!!! I was really surprised. It is so much better than regular cooked spagetti.

I had it with the marinara sauce from "Raw made Easy" (which is equally as good as the spagetti) and pine nuts with sprouted bread.

I could eat this every day! So far raw food is proving to be just plain delicious!

Just thought I'd share :)

Here is a recipe for a walnut marinara sauce that is a modified version of the previously mentioned marinara sauce. I may or may not have posted this in the recipe section (not sure).

Walnut Marinara Sauce (for spaghetti)
2 pints organic sweet grape tomatoes
1 cup sun-dried tomatoes, soaked
2 tablespoons mashed avocado
1 handful of basil
2 teaspoons dried oregano
2 cloves garlic
Grey Celtic Sea Salt, fresh ground to taste
sun-dried black pepper, fresh ground to taste
1 habanero pepper

1/2 cup crushed walnuts
1 red bell pepper diced

Blend all the ingredients (accept the crushed walnuts and bell pepper) together in a food processor and add water to get the right consistency. After blending, then add the diced bell pepper and crushed walnuts. There you have it, a nice meat sauce. It has the look and texture of pasta sauce with ground beef.

Substitutions: Any tomatoes will do. The sun-dried tomatoes can be oil packed if that is all you can find at the market. You can just substitute the 2 tablespoons of mashed avocado with EVOO (Extra Virgin Olive Oil). You can use dried basil if you don't have fresh. Any unprocessed sea salt will do. Any ground black pepper will do. You don't have to add the habanero if you don't want, you can just add a dash of cayenne.

If you have any questions, just post them and I will answer your questions. Just to make sure there is no confusion, you can leave out the garlic, basil and oregano if you want this to be a fruitarian dish. You make it, as is, if you want this to be a raw food dish.

How do you make the zucchini? Do you just grate the zucchini or use a mandoline on it?

Samuel-that sauce looks really good!

April-You can also grate it or put it through the food processor with the grating blade, although it doesn't come out exactly the same.

Try Zuchini lasanga too. I loved that just as much!

Here are attachments to the lasange and the marinara sauce recipe. It may look like a lot but they are both really simple recipes and you can add more veggies to the lasanga if you want.
The sauce is so quick it takes me less than 5 minutes to make now.

I'm going to give this raw spaghetti a try tonight. I don't have a spiral slicer to make the pasta from the zucchini, so I bought a spaghetti squash to replace it. Is this okay to use? I never tried one before! It says I have to boil or microwave it, but I'm hoping that's not necesary.

If it's a little hard, you can stick it in a bowl of warm water for a while.

You can cut it in half and then just scrape out of "noodles".

I did zucchini noodles and Samuel's "meat" sauce a week or so ago. SO FANTASTIC!

Thanks for the prompt response, Jenna! I made a mistake and didn't buy any grape tomatoes at the store. I came across some organic grape tomatoes, went to put the conventional ones I had back and then forgot to get the organic ones. :wall:

SamuelWilson's walnut marinara sauce is amazing! Just made some tonight. I couldn't figure out how to get the spaghetti squash to turn into noodles without baking it, but at least the sauce was raw. I'm going to try to find a spiral slicer and give the zucchini squash a try next time. My little brother didn't want to try the dish so I made regular meat, Prego sauce and noodles for him. He did say the raw dish looked good. Took me a year to get him eating whole wheat noodles, so I didn't expect him to try it.
