healthy oatmeal cake
Category: Desserts - Cakes

Suitable for a: vegetarian diet


Ingredients:
------------------------------------------------------

Dry ingredients:
1 cup oatmeal
3/4 cup whole wheat flour
1 tbsp baking powder
1/2 tsp baking soda
2 tbsp ground flax seed
1 tsp salt
1 tbsp cinnamon
stevia extract to taste (I have the white powdered extract in individual packets...I used 4 packets)

3 tbsp natural peanut butter
1 cup applesauce
1/2 cup milk
1 tsp vanilla extract
2 very ripe bananas
1 egg
1 cup blueberries
1/2 cup raisins


Instructions:
------------------------------------------------------

pre-heat oven to 375

Mix dry ingredients. Add peanut butter and mix well.

In a different bowl, mash the 2 bananas. Mix in the applesauce.

Beat egg, milk and vanilla together. Add to the banana and applesauce mixture. Pour the dry mixture into the wet one and mix well. Fold in raisins and blueberries.

Pour into greased cake pan.

Cook for about 30 minutes until golden brown and cooked through.

This was a make-it-up-as-you-go cake that turned out delicious! It makes a fairly dense cake that would also make good squares or muffins.

This would be very easy to modify so that it was vegan. You could also add any fruit or nuts that you like. I just added raisins and blueberries because that's what I happened to have.

With bananas, blueberries, peanut butter AND applesauce, I'd think you could just leave out the egg without necessarily even subbing something else.
