3-Ingredient Chapatis

Suitable for a: vegan diet
Ingredients:

Not quite 2 cups white or whole-wheat flour
1/16 teaspoon salt
About 2/3 cup water
Instructions:

Mix and then sift the flour and salt together into a large bowl and make a hollow in the center. Gradually add the water, making a firm dough.
Knead well for about 10 minutes(or less if dividing recipe), until the dough is smooth. Cover with a damp cloth and leave to rest for about 30 minutes.
Divide the dough into eight portions and with a floured rolling pin and board, roll each into a circle about 6 inches in diameter. They should be very thin.
Cook each chapati in a very hot(to test, toss a few drops of water onto the pan and they should sizzle) nonstick frying pan, without fat.
When the top surface shows signs of bubbling, turn the chapati over and cook for up to 40 seconds on the other side.
Using tongs, hold the chapti over a flame for it to puff up, and serve hot.

These are a lot like tortillas. Good with anything folded up inside. This recipe makes eight. The puffing part sounds strange, and I didn't think it would work when I made them, but it did :)
