Granola
Category: Breakfast
Suitable for a: vegan diet
Ingredients:
------------------------------------------------------
1/4 C soaked raw almonds
1/4 C soaked raw sunflower seeds
1/4 C soaked raw walnuts
4 pitted medjool dates, chopped, unsoaked
1/4 t cinnamon
dash celtic sea salt
1/2 C sliced fruit of choice
1/2 C almond milk
Instructions:
------------------------------------------------------
First soak all the raw nuts and seeds in water for several hours. Then drain the seeds and let them air dry in a colander or strainer. I personally like to place them in the Excalibur on 105 for an hour or so. This allows the nuts and seeds to regain some crunchiness but still have active enzymes. I then store this dry nut and seed mix in a vacuum sealed container.
Place the nut and seed mix in the cuisinart (or any food processor) fitted with the S blade and pulse briefly, just until coarsely chopped. Add the dates, cinnamon, and salt and proces briefly to mix. Transfer to a small bowl and combine with the fruit. Pour in the almond milk and enjoy.
