Oh my gosh, say it isn't so. Nobody likes my Mediterranean Kale? You have to get your leafy greens :)

Maybe they are all raw fruitarians who don't eat raw food cuisine :boobies:

You are right, I need to come up with a fruitarian version.

Here is a fruitarian version...

Mediterranean Cucumber
Green peelings from 3 large organic cucumbers
1 1/2 t mashed avocado
1 1/2 t fresh lemon juice
1/8 t celtic sea salt
1/4 red bell pepper, diced
1 T raw pine nuts
1 T sliced raw black olives
black pepper to taste
cayenne pepper to taste

Directions: Peel 3 large organic cucumbers. For this recipe, organic is required as I do not suggest eating the peelings of non organic cucumbers. However, I will leave that decision up to you. Place the peelings in a mixing bowl with the other ingredients and mix well. Set in the refrigerator to marinate, preferably over night.

I would make this recipe any time you are making something where you need peeled cucumber. This way you can make use of any cucumber peelings you have left over.

If it wasn't so much fun to blend raw kale with water to make a radioactive looking smoothie, then I'm sure I'd be all over the Mediterranean Kale. That and I can't seem to find the recipe just the picture! I'm guessing we replace the cucumbers with kale in the fruitarian recipe. Sounds good, especially with the olives! I haven't had those things in a while. Been abusing their oil instead :(
