Vegan Strawberry Cheesecake
Category: Desserts - Cakes

Suitable for a: vegan diet


Ingredients:
------------------------------------------------------

1 container of tofutti cream cheese
2 TBSP strawberry syrup (or you can use regular maple syrup)
1 TBSP vanilla
1/2 cup sugar
1/2 cup vanilla soymilk
1 graham cracker crust
Fresh strawberries


Instructions:
------------------------------------------------------

Mix all ingredients (except crust and strawberries) together and blend in a food processor (or a blender.) Blend until smooth and creamy. Pour into graham cracker crust. Bake at 350 degrees for 30 minutes. Place in freezer, let cool. Once cool, slice strawberries and place on top of cake.

Enjoy!

P.S. I just made this last night and it's really yummy. It's really soft, though, almost like creme brulee. If anyone has any tips on how to make it thicker let me know! :)

would any local or chain supermarkets carry Tofutti cream cheese? I've been at college for a while, so haven't been able to check much. I remember that Stop & Shop carried Tofutti ice cream...(sooooo good :drool:)

I know Wegman's does, and of course Wholefoods. What stores do you have near you? Seriously, that stuff is so good - in this recipe, or on bagels...Mmm!

are graham cracker crusts vegan, or do you have to make it homemade?

I thought graham cracker crusts weren't vegan ?

There are definitely vegan ones. I buy mine from Wholefoods (they have chocolate ones too...mmm!) but I vaguely remember Keebler ones being vegan also.

Tried this last week, and it was pretty good.

I just happened to have some tofutti cream cheese in the fridge,

Although I used digestive biscuits for the base. digestives, marg and sugar. the marg and sugar melted in a pan and the add the biscuits.

I tried making it again, but this time added a block of semi-firm tofu(well, not the silk tofu or the firm tofu. duno what you would call it), at the blender stage. It filled it out a bit more.

I thought it was better.
